How To Cook Sofiyani (White)Biryani Recipe Video Tutorial


Ingredients For Sofiyani (White)Biryani:


  1. Take Cooking oil 1 tbs 
  2. Take Lehsan (Garlic) 8 cloves 
  3. Take Hari mirch (Green chilies) 14-15 
  4. Take Badam (Almonds) 14-15 
  5. Take Laung (Cloves) 5-6 
  6. Take Hari elaichi (Green cardamom) 10-12 
  7. Take Jaifil (Nutmeg) ½ piece 
  8. Take Javatri (Mace) 1 piece 
  9. Take Mutton mix boti 750 gms 
  10. Take Lemon juice 1 & ½ tbs 
  11. Take Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs 
  12. Take Namak (Salt) 1 & ½ tsp or to taste 
  13. Take Dahi (Yogurt) whisked 1 Cup 
  14. Take Zeera (Cumin seeds) 1 tsp
  15. Take Garam masala powder 1 tsp
  16. Take Haldee powder (Turmeric powder) ½ tsp 
  17. Take Dhania powder (Coriander powder) 1 & ½ tbs 
  18. Take Podina (Mint leaves) ¼ Cup 
  19. Take Hara dhania (Fresh coriander) ¼ Cup 
  20. Take Pyaz (Onion) fried 1 Cup 
  21. Take Doodh (Milk) hot ¾ Cup 
  22. Take Cooking oil hot ¾ Cup 
  23. Take Hari mirch (Green chilies) 6-8 
  24. Take Podina (Mint leaves) chopped handful 
  25. Take Hara dhania (Fresh coriander) chopped handful 
  26. Take Pyaz (Onion) fried 
  27. Take Chawal (Rice) basmati ½ kg (soaked & boiled until 3/4thdone) 
  28. Take Pyaz (Onion) fried

Directions For Sofiyani (White)Biryani:


  1. First in a small frying pan, add cooking oil, garlic and green chilies, fry for 2-3 minutes & set aside.
  2. Then In a small frying pan, add almonds, cloves, green chilies, nutmeg, mace, and roast until fragrant & let it cool.
  3. Then In spice mixer, add roasted spices and grind to make a fine powder and reserve half quantity for later use.
  4. Then In remaining ground spices, add fried green chilies+garlic and grind well & set aside.
  5. Then In a bowl, add mutton mix both, lemon juice, ginger garlic paste, and salt, mix well, cover and marinate for 30 minutes.
  6. Then add ground green chilies paste, yogurt, cumin seeds,garam masala powder, turmeric powder, coriander powder, mint leaves, fresh coriander, fried onion and mix well.
  7. Then Cover and let it marinate for 2 hours to overnight in the refrigerator.
  8. Then In the pot, add marinated mutton and hot milk, mix well and cook for 6-8 minutes.
  9. Then Cover and cook on medium flame for 12-15 minutes.
  10. Then Add hot cooking oil and mix well.
  11. Then Add green chilies and mix.
  12. Then Add mint leaves, fresh coriander and mix well.
  13. Then Add reserved ground spices, fried onion, boiled rice, fried onion and remaining reserved ground spices, cover and steam cook for 8-10 minutes.
